池养南美蓝对虾与南美白对虾肌肉营养品质的比较

A COMPARATIVE STUDY OF NUTRITIONAL QUALITY IN THE MUSCLE OF PENAEUS STYLIROSTRIS AND PENAEUS VANNAMEI IN THE CULTURED2POND

  • 摘要: 对南美蓝对虾和南美白对虾的肌肉营养成分与营养品质进行了分析比较。结果表明:南美蓝对虾的粗蛋白含量显著高于南美白对虾(P0.05),南美白对虾的水分、粗脂肪和粗灰分含量均显著高于南美蓝对虾(P0.05)。两种对虾的氨基酸组成基本一致,均含有18种氨基酸,四种鲜味氨基酸总量分别为31.30%、30.73%(干样百分比),必需氨基酸指数(EAAI)分别为69.88、62.42,其构成比例符合FAO/WHO的标准。脂肪酸中EPA与DHA含量均较高,分别为20.91%、18.60%,矿物元素含量丰富。上述分析表明,南美蓝对虾和南美白对虾肌肉均为优质的动物蛋白食品,从营养学的角度,南美蓝对虾的蛋白质营养价值要高于南美白对虾,南美白对虾的脂肪酸营养价值高于南美蓝对虾。

     

    Abstract: This paper briefly compared the nutritive components and nutritional quality in the muscle of Penaeus stylirostris and Penaeus vannamei in the culturedpond.In our research, samples of both the P.stylirostris and the P.vannamei were divided into five groups.These samples were collected from Hufeng special aquaculture Ltd.of Wuxi in October of 2004, which were bred in the same environment conditions and were fed the same food.The results showed that the contents of crude protein, crude fat, moisture and crude ash in fresh muscles of P.stylirostris and the P.vannamei were 19.65 0.25%,19.08 0.23%; 0.21 0.01%,0.29 0.03%;78.50 0.51%,79.29 0.45%;11.3 0.09%,1.22 0.07% respectively.The crude protein content in the muscle of P.stylirostris was significantly higher than that in the muscle of P.vannamei ( P 0.05), while moisture, crude fat and crude ash contents in the muscle of P.vannamei were significantly higher than in the muscle of P.stylirostris ( P 0.05).The composition of amino acids in the muscle of the two shrimps were found those 18 common amino acids and 8 essential amino acids for human needs, and the amino acids were pretty much accordant.In dry samples, four kinds of delicious amino acids accounted for 31.30% and 30.73%, respectively.The essential amino acids index (EAAI-was 69.88 and 62.42 respectively and the constitutional rate of the essential amino acids met the FAO/WHO Standard.According to nutrition evaluation, in the amino acids score (AAS-and chemical score (CS), the limited amino acids of Penaeus stylirostris were Met + Cys, Val, Thr and Phe + Tyr: while the limited amino acids of Penaeus vannamei were Val and Met + Cys.The composition of fatty acids in the muscle of the two kinds shrimps was found 8 saturated fatty acids and 12 unsaturated fatty acids.The amount of EPA and DHA in fatty acids was 20.91% and 18.60% respectively.These numbers were higher than those of their more economic counterparts.Minerals such as K, P, Zn,Fe and Cu were rich in these samples, and the ratio of Zn and Cu was rational, the ratio of Zn and Fe was not.Our study indicated that the muscle of P.stylirostris and P.vannameis is high quality food full of animal protein.The pro2 tein nutritional value of P.stylirostris is higher than that of P.vannameis, while the fatty acids nutritional value of P.vannameis is higher than that of P.stylirostris from nutritious angle.
