万安玻璃红鲤的肌肉营养成分分析

AN ANALYSIS OF THE NUTRITIVE COMPOSITIONS IN THE MUSCLE OF WAN'AN GLASSY RED CARP (CYPRINUS CARPIO VAR.WAN'ANENSIS)

  • 摘要: 对万安玻璃红鲤的肌肉营养成分分析结果(鲜重百分比)为:蛋白质含量占19.07%,水分78.75%,灰分1.09%。肌肉中含有18种氨基酸,总量为774.59mg/g,其中,有8种人体必需的氨基酸,总量为320.72mg/g;含量较高的有赖氨酸、谷氨酸、门冬氨酸、甘氨酸和丙氨酸,此外,尚含有适量的钾、钠、钙、镁和微量的铜、锌、铁等营养元素。这些表明万安玻璃红鲤是一营养价值较高的优良鱼类品种。

     

    Abstract: The major nutrition compositions in the muscle of Wan'an glassy red carp, (Cyprinus carpio var. Wan'anensis) have been analysed. The muscle consisted of 19.07% crude protein, 78.75% moisture and 1.09% ash. By analysing the amino acid, there were 18 kinds of amino acids in dry muscle of this fish with the total amount being 774.59mg/g and 8 kinds of them being essential andno acid. The total amount of essential amino acids was 320.72 mg/g, with Lysine, Methionine, Aspartic acid,Glutamic acid, and Glycine being particularly rich. In Wan'an glassy red carp the muscle contains nutritional elements of K, Na, Ca, Mg and microelements Cu, Zn,Fe.
