    AN ANALYSIS OF THE NUTRITIVE COMPOSITIONS IN THE MUSCLE OF WAN'AN GLASSY RED CARP (CYPRINUS CARPIO VAR.WAN'ANENSIS)

    • The major nutrition compositions in the muscle of Wan'an glassy red carp, (Cyprinus carpio var. Wan'anensis) have been analysed. The muscle consisted of 19.07% crude protein, 78.75% moisture and 1.09% ash. By analysing the amino acid, there were 18 kinds of amino acids in dry muscle of this fish with the total amount being 774.59mg/g and 8 kinds of them being essential andno acid. The total amount of essential amino acids was 320.72 mg/g, with Lysine, Methionine, Aspartic acid,Glutamic acid, and Glycine being particularly rich. In Wan'an glassy red carp the muscle contains nutritional elements of K, Na, Ca, Mg and microelements Cu, Zn,Fe.
